What is Salmonella ?
In recent weeks there was a salmonella outbreak that affected more than one thousand people in United States. They poured the tomato fault first, then to and finally Molcajete chilies from Mexico, while local producers and government say this is wrong, that surely the “bug is gringo”
What is Salmonella?
What is talking about is a pathogenic microorganism, ie a way of life that can only be seen using a microscope and being in touch with the people in it triggers a series of signs and symptoms of severe can keep in bed for several weeks.
The “bug” is a bacterium that is shaped like a stick, so it is identified as a “bacillus” which belongs to the family of Enterobacteriaceae, capable of causing gastrointestinal infections generally characterized by the presence of diarrhea.
Bacteria viewed through a microscope, have different ways. Which are called cocci are spherical, which spirals appear and are called spirochetes that look like stick-like-Salmonella bacilli are. These are eliminated in the feces and thus are found in wastewater.
This genus also includes a classification according to the color that shows when they are applied in the laboratory, a special dye. When “painted” pink tone, such as salmonella, are said to be Gram-negative and if the color is taken after the reaction is blue Gram. In the microscopic world outnumber the former.
Needless to say there are about 2,200 varieties of Salmonella. He is responsible for gastroenteritis and in more complicated cases typhus or typhoid fever.
Typhus or typhoid fever is very severe. One of its symptoms is the presence of fever (increased body temperature) between 39 and 40 degrees, as well as headache, escalosfrÃos, exhaustion, confusion, rash (tiny marks) pink skin, bloody stools or constipation .
The recovery of the infected person can range from weeks to months, and if not treated on time can be perforated intestine and contaminate the abdominal cavity resulting in peritonitis. Also come to infect the liver or gallbladder, even pass into the blood causing bacteremia at a time, if you get to perform in a bone osteomyelitis.
Salmonella even affect the heart valves, meninges – the membranes covering the brain, kidney and urinary tract or genital.
Many of the Enterobacteriaceae are part of the intestinal flora of the human being as is the case of Escherichia, Enterobacter, Serratia, and other Sighella, but its manifestation as disease occurs when their colonies are raised well above their usual numbers .
The time it takes to incubate in Salmonella is one to two weeks. If it does not start the treatment the temperature increases gradually over two or three days, remained high in two weeks and the third begins to decline until the fourth showing stabilization. As already indicated, and the fatigue is common in severe cases the patient may be delirious, stupor or coma.
Gastrointestinal discomfort so often met with initial fluids to avoid dehydration, as well as irritant-free diet and fat. Infected meat, raw milk, eggs and byproducts, poultry are a source of Salmonella, which is still considered a serious public health problem in emerging economies (underdeveloped countries)
